Bureka ima samo u ograni\u010denim koli\u010dinama i slu\u017ei se samo subotom ili nedeljom u podne. Zaboravih koji dan, bila sam samo jednom. Imaju svega par tepsija, pa to ba\u0161 brzo plane. Minuti su u pitanju. Taj burek i nije sasvim po mom ukusu. Burek jeste pravi, tj. onakav kakav se mo\u017ee kupiti u nekim pekarama po Srbiji. Problem je \u0161to nije dobar kao u starim burekd\u017einicama, koje miri\u0161u na pe\u010deno testo ve\u0107 negde u 4 ujutru, a u 10 ve\u0107 i zatvore radnju jer je sav burek rasprodat. E takvog, najboljeg, bureka u Singapuru nema.<\/p><p>No, to nije razlog za plakanje, jer u Singapuru \u017eivi puno Indijaca. Indijci vole lebac koliko i Srbi, i varijacija na temu ima puno. Jedna od testenina koju prave dosta li\u010di na na\u0161 prazan burek. To bo\u017eanstvo zove se prata tj. parata, zavisi koga pitate. Mo\u017ee se kupiti na manje-vi\u0161e svakom \u0107o\u0161ku u Singapuru. E sad, ako na onom na\u0161em malom Balkanu mi ne mo\u017eemo da se dogovorimo \u0161ta je burek, a \u0161ta pita, a o varjacijama iste da ne pri\u010damo, jasno vam je da je slu\u010daj s pratama i Indijcima isti. Jednom sam mesila i razvla\u010dila pitu kod ku\u0107e u prisustvu jedne Indijke. Njen komentar je bio, da je to testo potpuno isto kao prata. Postoje varijacije naravno, neko dodaje jaje u testo, neko mleko. Ali, do momenta razvla\u010denja postupak je isti. Dobro ume\u0161aju testo, da bude mek\u0161e. Podele ga na loptice i svaku uvaljaju u ulje. Za razliku od pite, prave manje loptice, i razvla\u010de testo po nauljenoj radnoj povr\u0161ini. Njihovo razvu\u010deno testo bude u pre\u010dniku oko 40cm. Testo razvuku ba\u0161 tanko, kao za pitu. Ja za burek recimo ostavljam testo namerno deblje. Razvu\u010deno testo dobro prema\u017eu uljem, saviju po tre\u0107inu sa svake strane, i peku na u\u017earenoj, dobro nauljenoj plo\u010di sa obe strane, dok ne porumeni. Pored prazne prate, u Singapuru je jako popularna prata sa jajetom. Nju prave tako \u0161to na razvu\u010denu koru, po sredini razbiju jaje, pa tek onda ispresavijaju kore. Razlika postoji i u slu\u017eenju. Proguglah malo o istoj, i kada videh da se otvara zorom, a zatvara jo\u0161 pre podneva, tj. kad rasprodaju sve, umalo ne padoh na dupe od odu\u0161evljenja. Pomislih, pa ovo stvarno kao burekd\u017einica. Ne bi nam te\u0161ko jutros da poranimo i svratimo do verovatno najpopularnije pratarnice u Singapuru: Mr and Mrs Mohgan&#8217;s Super Crispy Roti Prata. Naru\u010dili po jednu praznu, i jednu sa jajetom. Prazna je zaista kao prazan burek, ali bez gnjecave sredine, sav je kao ona gornja hrskava korica. Prata s jajetom ima mnogo puniji ukus. Svidela mi se, ali su mi \u010dula bila zbunjena \u0161to u bureku nalaze jaje. U pratarnicama obi\u010dno u ponudi imaju i prate sa sirom i prate s pe\u010durkama. Meni se ni jedna ne dopada, jer stavljaju pe\u010durke iz konzerve, a sir je jedan od onih tvrdih, \u017eutih \u0161to se tope. I to neki jeftini, jer je ukus toliko neutralan, a miris nepostoje\u0107i, da je te\u0161ko utvrditi koji je ta\u010dno u pitanju. A te jeftine verzije \u017eutih sireva meni su kao previ\u0161e dugo \u017evakane \u017evake, bezukusne i gnjecave. Uz prate smo dobili ljutikasti kari sos, koji odli\u010dno ide uz hrskavo, masno testo. Ovo zadovoljstvo, od 2 prazne i 2 prate s jajetom ko\u0161ta nekih 360 dinara (4,60 SGD).
